Smashed Sweet Potato Delight

There is no link for this recipe because I made it up myself with some help from my mom and dad. This recipe serves 5.

 

Ingredients:

  • 5 medium sweet potatoes
  • 2 tbsp. vegetable oil
  • 1 tbsp. butter
  • 1 medium onion, diced
  • 1 red bell pepper, diced
  • 2 cloves of garlic, minced
  • 1 dried habanero pepper, flaked (any spicy pepper will work)
  • 1 tsp. turmeric
  • 1 tsp. paprika
  • Salt and pepper (optional)
  • Cilantro or parsley for garnish
  • 1 cup cheddar cheese

 

Directions:

1)      Preheat oven to 350 degrees

2)      Scrub the sweet potatoes to get the skins clean

3)      Boil the sweet potatoes in a pot of water for 40 minutes on medium high

4)      While the sweet potatoes are boiling, add oil and butter to a frying pan and heat on medium high

5)      When the oil is hot, add the onion, red pepper, garlic, and dried habanero pepper

6)      Sauté until the onion and red pepper are soft

7)      Add the turmeric, paprika, salt, and pepper

8)      Stir thoroughly to mix the spices and turn down pan to low

9)      When the potatoes are cooked, remove from water and place on a baking sheet covered with aluminum foil and spray with a non-stick cooking spray

10)   Using a potato masher, smash the potatoes about halfway flat

11)   Spread the frying pan mixture over the smashed potatoes

12)   Sprinkle cheese over potatoes

13)   Bake in oven for 10 minutes or until cheese is golden brown

 

I added cheese because I was afraid that the habanero pepper would be too spicy, but it turns out that it wasn’t, so next time I might leave the cheese out. Overall, it turned out very yummy and I liked how the spices and the potato went together. You should definitely try this recipe.

 

P.S. I added radishes fresh from out garden with butter and salt as a small side dish. They were really great too. But be careful – they can be really hard to chew!
