Ninja Subs and Ninja Chips

There is no link for this recipe because I made it up myself (with some help from Mom and Dad). I made this because my brain likes sandwiches and so do my taste buds. This recipe serves 5.

Ingredients:

  • 2 tbsp. olive oil
  • 5 hoagie rolls
  • 5 hard-boiled eggs
  • ½ medium onion cut into slivers
  • 1 red bell pepper cut into slivers
  • 1 small yellow squash, sliced
  • Ground red pepper, black pepper, and salt to taste
  • Sliced pepper jack cheese
  • American cheese (optional)
  • 3 Avocados
  • Guacamole Mix (spicy)

Directions:

1)      Preheat the oven to 350 degrees

2)      Prepare the guacamole mix according to the directions, but use 3 avocados instead of 2

3)      Heat the oil in a frying pan

4)      Add the onion, red bell pepper, and squash

5)      Stir to coat the vegetables

6)      Add ground red pepper, black pepper, and salt to taste

7)      Sauté until the vegetables are soft and slightly browned

8)      Open the hoagies rolls, place them face up on a cookie sheet, and put them in the oven

9)      Toast the hoagie rolls until light brown

10)  Place a large spoonful of guacamole on each hoagie and spread it around; there should be about ½ of the guacamole remaining

11)  Add the vegetables on top of the hoagies rolls

12)  Place slices of pepper jack and American cheese on top

13)  Slice the hard-boiled eggs on place on top of the cheese

14)  Put in the oven and cook until the cheese has melted

15)  Serve with tortilla chips and the rest of the guacamole as a dip

I liked this recipe a lot and it was fun to make. I call it Ninja Subs and Ninja Chips because they have a lot of kick – they are SPICY!
