Shakshuka: A Berber Omelet Recipe

This recipe is from the deserts of North Africa and from a website Organic Authority. This dish can be made for breakfast and dinner. .

Ingredients:

  • 2 tablespoons of olive oil
  • ½ yellow onion peeled and chopped
  • 2 cloves of garlic, minced
  • 1 red bell pepper seeded and chopped
  • 1teaspoon of ground turmeric
  • 1 teaspoon of ground cumin
  • ½ teaspoon of ground coriander
  • ½ teaspoon of ground paprika
  • 1/8 teaspoon of cyan pepper
  • 1/8 teaspoon of sugar
  • 2 cans of diced tomatoes
  • 6 eggs
  • Salt
  • Pepper
  • Cilantro or flat-leafed parsley for garnish

 Directions

  1. Heat your skillet on the stove at medium heat add chopped onions add sauté until soft
  2. Add minced garlic and sauté into the mixture becomes fragrant then add a bell pepper and cook for 7 minutes
  3. Spices go next add the turmeric cumin coriander and paprika and sugar mix well
  4. Add tomatoes and mix
  5. Crack each egg and add to the pan
  6. Cover the pan and turn down the heat and shimmer for10 to 15 minutes
  7. Salt and pepper your omelet and garnish. Serve with bread

In my opinion you should try this recipe; it is extremely yummy. I love how the eggs and everything else fit together to make a big bowl of goodness. I also like the large range of spices; they are a nice addition to the recipe and adding cilantro makes it really tasty and adds a nice flavor to it so I think you should definitely put that in too. To top it all off I think you should try this recipe because it is goooooooood.
